Then, the moment I began my soup, the supervisor brought out the main dish. I had specifically asked for the seabass to be well done with crispy skin. Since I had just started my soup, I politely asked them to take the main dish back and serve it later. When they brought it out again, it was clearly the same plate that had been sitting in the kitchen. The fish was dry, and the skin was soaked and no longer crispy, exactly the opposite of what I had requested.”
