A simple plate of spanish orzo with marinated and grilled artichoke, roasted peppers, kalamata olives, peas, sautéed wild mushroom and pomodoro sauce. Topped with fresh rocket and served alongside charred lemon. Doesn’t this sound so wholesome?, because it certainly tasted wholesome. This dish had contrasting flavours as it was more on the stronger side due to the use of kalamata olives, along with the tartness from the pomodoro sauce and gentle hints of smokiness from the roasted peppers. She loved this dish that she devoured it in no time.”

Finally, topped with shaven manchego cheese, fried parsley and crushed smoked paprika almonds. Now these are some of the ingredients I’ve never tried and it sounds so scrumptious. You can taste the richness of the tomatoes, the chicken had plenty of flavour, the nuts had a earthy tone to it, the sharpness of the manchego calms the tangy taste of the sauce- I just LOVED the harmony of flavours, textures and ingredients going on here, my tummy was elated indeed.”
